This August, C2C at Taj Cidade de Goa – Horizon welcomes Chef Alaa Alloush for a limited-period kitchen residency that brings the flavours of the Eastern Mediterranean to Goa, with the sea and its bounty as an unlikely but compelling point of connection.
Beginning 15 August, the restaurant will host Chef Alloush for lunch and dinner, where a menu shaped by memory, heritage and the traditions of Middle Eastern cooking meets the produce and coastal character of Goa.
For Chef Alloush, food is inseparable from place and recollection. His cooking draws on the flavours he grew up with and the culinary traditions of the Middle East, while allowing room for reinterpretation. At C2C, that approach finds a natural counterpoint in Goa, a region whose cuisine has itself been shaped by centuries of maritime exchange, spice routes and coastal abundance.
The resulting menu moves between the familiar and the unexpected. A Prawn Kunafa with garlic harissa sauce brings together crisp pastry and delicate seafood with the warmth of harissa, while Grilled Lamb Chops with cinnamon and garlic lean into the deep, aromatic character of Eastern Mediterranean cooking. Orzo Almakulat Albahria and Salt-baked Chicken offer more substantial expressions of the chef’s repertoire, balancing technique with the generosity that defines the region’s cooking.
Dessert returns to the classics, with Baklava and Rose Petal Ice Cream offering a fragrant, restrained finale.
More than a guest-chef menu, the residency is an exchange between two coastal cultures: the Eastern Mediterranean and Goa. At C2C, where cuisines of the world’s coastlines share the table, Chef Alloush’s cooking adds another layer to this ongoing conversation.
